Analytical and technological platforms for the development of prebiotics and probiotics

FoodBooster aims to develop prebiotic ingredients rich in fructo-oligosaccharides using gentle processing methods.

The FoodBooster project (WP2 FOSbooster) aims to produce a prebiotic powder based on fructo-oligosaccharides (FOS) extracted from yacon root (Smallanthus sonchifolius), a plant increasingly cultivated in Europe. The transformation process consists of two stages: first, gentle extraction of the juice by cold pressing, followed by vacuum evaporation to obtain a syrup; then, conversion of this syrup into powder using various conventional and innovative drying techniques. To support the development of this powder, analytical methods have been implemented: UPLC-QqQ to quantify short-chain FOS (DP3-10), and UPLC-HRMS to characterize in detail the FOS and their degradation products, oxidized derivatives, and isomers throughout the process.
