The project aims to:
• Develop sustainable production of alternative proteins
• Develop structured mycelium proteins with a natural meat-like texture
• Reduce environmental impact compared to conventional meat production
• Promote circular and resource-efficient food systems through the use of by-products from agriculture and the agri-food industry
